1 tablespoon olive oil
2 cloves garlic, minced
1 cup orzo pasta
3 cups vegetable broth
1 bunch asparagus, trimmed and cut into 1-inch pieces
1/2 cup grated Parmesan cheese
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or deep skillet over medium heat.
Add the minced garlic and cook for 30 seconds until fragrant. Do not let it brown.
Add the orzo pasta to the pot and toast for 1 minute, stirring constantly.
Pour in the vegetable broth. Bring the mixture to a simmer, then reduce the heat to medium-low, cover, and cook for 10 minutes, stirring occasionally to prevent sticking.
Stir in the cut asparagus pieces. Continue to cook, uncovered, for another 3 to 5 minutes, or until the orzo is tender and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the Parmesan cheese, lemon juice, and lemon zest.
Season with salt and pepper to your preference. Serve immediately.
Notes
For extra flavor, use chicken broth instead of vegetable broth.
You can substitute fresh spinach for the asparagus if you prefer.
