Make a crowd-pleasing, handheld version of the classic Louisville Hot Brown sandwich using Hawaiian rolls. These baked turkey and bacon sliders are covered in a simple Mornay sauce, perfect for your next Kentucky Derby party.

Ingredients

Scale
  • 1 package (12 count) Hawaiian sweet rolls
  • 1 pound sliced deli turkey breast
  • 8 slices cooked bacon, crumbled
  • 1 large ripe tomato, thinly sliced
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Slice the entire package of Hawaiian rolls horizontally, keeping the rolls connected. Place the bottom half of the rolls in the prepared baking dish.
  3. Layer the sliced turkey evenly over the bottom half of the rolls.
  4. Sprinkle the crumbled bacon over the turkey layer.
  5. Arrange the thin tomato slices over the bacon.
  6. Prepare the Mornay sauce: In a small saucepan over medium heat, melt 4 tablespoons of butter. Whisk in 4 tablespoons of all-purpose flour and cook for 1 minute. Gradually whisk in 2 cups of whole milk until smooth. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 5-7 minutes. Remove from heat and stir in 1 cup of shredded Gruyère cheese and 1/4 cup of Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. Pour the Mornay sauce evenly over the tomato layer.
  8. Place the top half of the rolls over the sauce.
  9. In a small bowl, melt 4 tablespoons of butter. Whisk in 1 teaspoon of Dijon mustard. Brush this mixture evenly over the top of the rolls.
  10. Sprinkle the remaining 1/2 cup Gruyère and 1/4 cup Parmesan cheese over the top.
  11. Cover the baking dish tightly with aluminum foil and bake for 15 minutes.
  12. Remove the foil and bake for another 5-10 minutes, or until the cheese is bubbly and the tops are golden brown.
  13. Let the sliders rest for 5 minutes before slicing between the rolls and serving these easy game day sliders warm.

Notes

  • For a make ahead derby snack, assemble the sliders completely, cover, and refrigerate for up to 4 hours before baking. Add 5-10 minutes to the covered baking time if baking directly from the refrigerator.
  • You can substitute Gruyère with Swiss cheese if needed for this Louisville hot brown recipe variation.
