Ingredients
Scale
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk, room temperature
1/2 cup vegetable oil
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup hot strong brewed coffee
1 cup semi-sweet chocolate chips (for ganache)
1 cup heavy cream (for ganache)
2 tablespoons unsalted butter (for ganache)
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add the buttermilk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes.
Carefully stir in the hot coffee by hand until the batter is smooth. The batter will be thin.
Divide the batter evenly between the prepared cake pans.
Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
To make the ganache, place the chocolate chips in a heatproof bowl.
Heat the heavy cream and butter in a small saucepan over medium heat until it just begins to simmer. Do not boil.
Pour the hot cream mixture over the chocolate chips. Let it stand undisturbed for 5 minutes.
Whisk the mixture slowly until smooth and glossy. Let the ganache cool and thicken slightly at room temperature until it reaches a spreadable consistency.
Once the cakes are completely cool, frost the layers with the chocolate ganache frosting and stack them.
Notes
Using hot coffee deepens the chocolate flavor without making the cake taste like coffee.
Buttermilk reacts with the baking soda to give this cake its signature moist texture.
For the best results, use high-quality cocoa powder for a dark chocolate cake experience.
