For Quick Pickled Onions:
1 red onion, thinly sliced
1/2 cup white vinegar
1/2 cup hot water
1 teaspoon sugar
1/2 teaspoon salt
Instructions
Prepare the pickled onions: In a jar, combine the sliced red onion, white vinegar, hot water, sugar, and salt. Stir well and set aside while you prepare the chicken.
Season the chicken: In a bowl, toss the chicken breasts with olive oil, chili powder, cumin, salt, and pepper.
