Make quick, flavorful drop biscuits packed with sharp cheddar and fresh chives. These are easy to prepare and perfect as a satisfying dinner side dish.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup fresh chives, chopped
  • 3/4 cup milk

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Cut the cold butter into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and chopped chives until they are evenly distributed.
  5. Pour in the milk all at once. Stir gently with a fork just until the dough comes together. Do not overmix.
  6. Drop spoonfuls of the dough onto the prepared baking sheet, about 2 inches apart. You should get about 10 to 12 biscuits.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown.
  8. Serve warm.

Notes

  • For the best flavor, use a sharp, aged cheddar cheese.
  • If you do not have fresh chives, you can substitute with 1 tablespoon of dried chives, but fresh herbs provide a better taste.
  • You can brush the tops of the biscuits with melted butter immediately after removing them from the oven for extra richness.
