Make this Mexican street corn inspired chicken salad featuring creamy dressing, fresh cucumber, and smoky corn flavor. It is an easy, flavorful summer dish.

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup corn kernels (grilled or roasted for best flavor)
  • 1 large English cucumber, diced
  • 1/2 cup mayonnaise
  • 1/4 cup Mexican crema or sour cream
  • 1/4 cup Cotija cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • Salt and black pepper to taste

Instructions

  1. Prepare your corn: If using fresh or frozen corn, grill or sauté the kernels until lightly charred. Let cool slightly.
  2. In a medium bowl, whisk together the mayonnaise, crema or sour cream, lime juice, chili powder, and smoked paprika until smooth. This is your creamy elote-style dressing.
  3. In a large bowl, combine the cooked chicken, cooled corn, diced cucumber, finely diced red onion, and most of the crumbled Cotija cheese. Reserve some cheese for garnish.
  4. Pour the dressing over the chicken and vegetable mixture. Gently fold everything together until the chicken salad is evenly coated.
  5. Stir in the chopped fresh cilantro.
  6. Season the salad generously with salt and black pepper. Taste and adjust lime juice or chili powder as needed for your preference.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This makes it a great make ahead healthy chicken salad.
  8. Serve chilled, garnished with the remaining Cotija cheese.

Notes

  • For an extra smoky flavor, use fire-roasted corn kernels.
  • If you prefer a lighter salad, substitute half the mayonnaise with plain Greek yogurt.
  • This salad is excellent served on lettuce cups or alongside tortilla chips for dipping.
