Instructions

  1. Preheat your oven to 325°F (160°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. This takes about 3 minutes.
  3. Beat in the vanilla extract and lemon zest until combined.
  4. In a separate bowl, whisk together the flour, salt, and the crushed freeze-dried strawberries until the mixture is uniformly pink and blended.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. The dough will be thick and slightly crumbly.
  6. If the dough seems too dry to hold together, add the milk one teaspoon at a time until it forms a cohesive mass.
  7. Form the dough into a disk, wrap it in plastic wrap, and chill for 15 minutes. This step helps achieve the perfect shortbread texture.
  8. Roll the dough out on a lightly floured surface to about 1/4 inch thickness. Use a 2-inch round or square cookie cutter to cut out shapes.
