1 cup rolled oats
1/2 cup packed light brown sugar
1/2 teaspoon baking soda

1 cup (2 sticks) cold unsalted butter, cut into cubes
4 cups fresh strawberries, hulled and quartered
1/2 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
Instructions
Preheat your oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides for easy removal.
In a large bowl, whisk together the flour, rolled oats, brown sugar, baking soda, and salt for the crust.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Reserve about 1 1/2 cups of this mixture for the topping.
Press the remaining crumb mixture evenly into the bottom of the prepared baking pan to form the base layer. Bake the crust for 12 minutes until lightly golden.
While the crust bakes, prepare the filling. In a medium bowl, gently toss the quartered strawberries with the granulated sugar, cornstarch, and lemon juice until the strawberries are coated.
Spread the strawberry filling evenly over the warm, pre-baked crust.
Sprinkle the reserved 1 1/2 cups of crumble mixture evenly over the strawberry layer.
Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Cut into squares.
Notes
For a chewier topping, use quick-cooking oats instead of rolled oats.
If your strawberries are very juicy, add an extra teaspoon of cornstarch to the filling mixture.
You can substitute fresh strawberries with frozen ones; do not thaw them before using.
