Make this easy chicken dinner for a high protein meal prep solution. This one-pan wonder features a glossy, flavorful glaze with a perfect sweet and savory balance that kids love.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon grated fresh ginger
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Pat the chicken pieces dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil in a large skillet or pan over medium-high heat. Add the chicken and cook for 5-7 minutes until browned on all sides and mostly cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let it burn.
  4. In a small bowl, whisk together the honey, soy sauce, rice vinegar, cornstarch, water, ginger, and red pepper flakes (if using) until the cornstarch is dissolved. This creates your sauce base.
  5. Pour the sauce mixture into the skillet. Bring the sauce to a simmer, stirring constantly. It will thicken quickly, about 1-2 minutes.
  6. Return the cooked chicken to the skillet. Toss the chicken pieces gently until they are fully coated in the glossy, flavorful glaze. Cook for 1 more minute to heat through.
  7. Remove from heat. Garnish with sesame seeds and chopped green onions before serving immediately over rice or spring greens.

Notes

  • For an extra sticky glaze, let the sauce reduce for an extra minute before adding the chicken back in.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
