12 large eggs
1 cup fresh spinach, finely chopped
1/4 cup milk (any kind)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter or oil
6 whole wheat English muffins or bagels
6 slices low-fat cheese (cheddar or provolone)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
In a large bowl, whisk together the eggs, chopped spinach, milk, salt, and pepper until well combined.
Melt the butter or oil in a large non-stick skillet over medium heat. Pour in the egg mixture.
Cook the eggs slowly, stirring occasionally, until they are mostly set but still slightly wet, about 5-7 minutes.
Transfer the cooked egg mixture to the prepared baking dish. Bake for 10-12 minutes, or until the eggs are fully set.
Remove the eggs from the oven and let them cool slightly. Cut the egg mixture into 6 equal squares or rounds to fit your muffins.
Slice the English muffins or bagels in half. Place one slice of cheese on the bottom half of each muffin. Top with one portion of the egg mixture. Place the top half of the muffin on top.
Wrap each assembled sandwich tightly in plastic wrap, then wrap again in aluminum foil. Freeze for up to 3 months.
To reheat, remove the foil and plastic wrap. Microwave the sandwich on a paper towel for 1-2 minutes, flipping halfway, until heated through.
Notes
For the best freezer results, assemble the sandwiches without the cheese, then add the cheese before the final reheat step.
You can use any bread you prefer, but whole wheat options provide more fiber for a healthy start.
If you are short on time, you can scramble the eggs directly in the baking dish without pre-cooking them in a skillet.
