Crispy Smashed Potato Salad with Tzatziki Dressing

Upgrade your side dish with this crispy smashed potato salad. We mix perfectly smashed, crisp potatoes with a cool, herby tzatziki dressing for a memorable summer side.

Ingredients

  • 2 lbs small potatoes (like Yukon Gold)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cup chopped cucumber
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons extra virgin olive oil (for dressing)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.
  3. Spread the cooked potatoes on a baking sheet lined with parchment paper. Gently smash each potato with the bottom of a glass or a potato masher until flattened but still mostly intact.
  4. Drizzle the smashed potatoes with 2 tablespoons of olive oil, salt, and pepper.
  5. Bake for 20-25 minutes, or until the edges are golden brown and crispy. Remove from the oven and let cool slightly.
  6. While the potatoes cool, prepare the tzatziki dressing. In a medium bowl, combine the Greek yogurt, chopped cucumber, minced garlic, lemon juice, dill, and mint. Stir until mixed.
  7. Whisk in the 2 tablespoons of extra virgin olive oil until the dressing is smooth.
  8. In a large bowl, combine the slightly cooled smashed potatoes and the diced red onion.
  9. Pour the tzatziki dressing over the potatoes and gently toss to coat everything evenly.
  10. Serve this crispy potato salad warm or at room temperature.

Notes

  • For extra crispiness, you can briefly broil the potatoes for the last 2 minutes after baking. Watch them closely to prevent burning.
  • If you do not have fresh dill or mint, use 1 teaspoon of dried dill and 1/2 teaspoon of dried mint, but fresh herbs provide better flavor for this tzatziki recipe.
  • This dish makes a great Memorial Day side or a new summer recipe addition.
