  • 1 lb ground beef (80/20 recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon neutral oil
  • 12 small corn or flour tortillas
  • 1 cup shredded cheddar or American cheese
  • 1/4 cup hot honey
  • Optional toppings: finely diced white onion, pickles

Instructions

  1. Divide the ground beef into 12 equal balls, about 1.5 ounces each. Season lightly with salt and pepper.
  2. Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Add the oil.
  3. Place four beef balls onto the hot surface, leaving space between them. Immediately press each ball flat with a sturdy metal spatula until very thin (this creates the smash).
  4. Cook for 90 seconds without moving them. Scrape under the patty to lift it, flip it, and immediately top each patty with a small amount of shredded cheese. Cook for another 30 seconds.
  5. While the burgers cook, warm your tortillas in a separate dry pan or microwave until pliable.
  6. Place two cheesy smash burger patties into each warm tortilla.
  7. Drizzle the hot honey evenly over the tacos. Add diced onion and pickles if you are using them. Serve immediately.

Notes

  • For the best smash, use a piece of parchment paper between the spatula and the meat to prevent sticking while pressing.
  • If you do not have hot honey, mix 1/4 cup of regular honey with 1 teaspoon of your favorite hot sauce.
  • Use small street-taco sized tortillas for the best presentation and eating experience.
