Make this sweet and savory crostini featuring roasted strawberries glazed with balsamic and honey, served over creamy goat cheese on crisp baguette slices. It is an easy spring appetizer perfect for entertaining.

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 cups fresh strawberries, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey, plus extra for drizzling
  • 4 ounces soft goat cheese, softened
  • 1/4 cup fresh mint leaves, chopped
  • Pinch of salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Arrange the baguette slices on a baking sheet. Brush lightly with olive oil and bake for 6 to 8 minutes, until lightly golden and crisp. Set aside.
  2. In a medium bowl, toss the halved strawberries with 1 tablespoon of olive oil, the balsamic vinegar, 1 tablespoon of honey, and a pinch of salt.
  3. Spread the strawberries in a single layer on a small baking sheet. Roast for 12 to 15 minutes, until the strawberries are soft and slightly caramelized.
  4. While the strawberries roast, prepare the base. Spread a layer of softened goat cheese evenly over each toasted crostini slice.
  5. Top each crostini with a few of the warm, roasted strawberries.
  6. Drizzle the assembled crostini lightly with extra honey.
  7. Garnish with the chopped fresh mint leaves before serving.

Notes

  • For an extra layer of flavor, you can substitute half of the goat cheese with ricotta cheese for a milder base.
  • If you do not have fresh mint, a small sprinkle of black pepper on the strawberries before roasting adds a nice contrast.
  • Prepare the toasted baguette slices up to one day ahead and store them in an airtight container at room temperature.
