2 large outer leaves cabbage
1 tablespoon olive oil
1 pound ground beef or vegetarian patty mix
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon sweet pickle relish
1 teaspoon yellow mustard
1/2 teaspoon apple cider vinegar
1/4 teaspoon garlic powder
2 slices cheddar cheese (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Carefully peel two large, intact outer leaves from the head of cabbage. Trim any thick core pieces so the leaves lay flat.
Brush both sides of the cabbage leaves lightly with olive oil and sprinkle with a pinch of salt and pepper.
Place the leaves on a baking sheet and roast for 8 to 10 minutes until they are slightly softened and the edges begin to blister. Remove and set aside.
While the cabbage roasts, prepare your burger patties. Season the ground beef or vegetarian mix with salt and pepper.
Cook the patties in a skillet over medium-high heat or on a grill to your preferred doneness. If using cheese, place a slice on the patty during the last minute of cooking to melt.
Prepare the special sauce: In a small bowl, combine the mayonnaise, ketchup, pickle relish, yellow mustard, apple cider vinegar, and garlic powder. Mix well.
To assemble your low carb burger, place one roasted cabbage leaf on a plate. Spread a generous amount of special sauce on the leaf.
Place the cooked patty on top of the sauce.
Top the patty with the second roasted cabbage leaf, sauce-side down. Serve immediately for maximum crunch.
