Make these easy red velvet brownie bites for a perfect, portable, single-serving dessert. They have the classic tangy cocoa flavor and a moist texture, topped with a simple cream cheese swirl.

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon white vinegar
  • 1 teaspoon red food coloring (gel preferred)
  • 1/4 cup buttermilk
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, whisk the melted butter and granulated sugar until combined. Beat in the eggs one at a time. Stir in the vanilla extract.
  4. In a separate small bowl, mix the cocoa powder, white vinegar, red food coloring, and buttermilk until smooth. This creates the red velvet base color and tang.
  5. Pour the red mixture into the wet ingredients and mix until just combined. Gently fold in the dry ingredients until no streaks of flour remain. Do not overmix.
  6. Prepare the swirl: In a small bowl, beat the softened cream cheese and powdered sugar until smooth.
  7. Pour half of the red velvet batter into the prepared pan. Drop small spoonfuls of the cream cheese mixture over the batter. Pour the remaining batter over the top.
  8. Use a knife or skewer to gently swirl the cream cheese mixture through the batter.
  9. Bake for 20 to 25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  10. Let the brownies cool completely in the pan on a wire rack.
  11. Once cool, lift the parchment paper overhang to remove the slab. Cut into small, bite sized squares for your party tray.

  • For the best fudgy texture, use high-quality cocoa powder.
  • If you do not have buttermilk, mix 1/4 cup of regular milk with 1/2 teaspoon of white vinegar and let it sit for five minutes before using.
  • These bite sized chocolate desserts are excellent dusted lightly with powdered sugar instead of frosting.
