Instructions
Prepare the coffee: Brew your espresso or strong coffee and set aside to cool slightly.
Make the latte base: In a small saucepan, combine the milk, pistachio paste, granulated sugar, and vanilla extract. Heat over medium-low heat, stirring until the sugar and paste are fully dissolved. Do not boil.
Froth the base: Pour the warm pistachio milk mixture into a milk frother or use an immersion blender until slightly foamy.
Assemble the drink: Pour the cooled coffee into your serving glass. Add the warm pistachio milk mixture.
Prepare the cold foam: In a separate chilled bowl, combine the heavy cream, powdered sugar, and pistachio extract. Whisk vigorously or use a handheld frother until soft peaks form.
