  • 1/4 cup milk (dairy or non-dairy)

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of cocoa powder for dusting
  • For the Cold Foam: 1/4 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pistachio extract

Instructions

  1. Prepare the coffee: Brew your espresso or strong coffee and set aside to cool slightly.
  2. Make the latte base: In a small saucepan, combine the milk, pistachio paste, granulated sugar, and vanilla extract. Heat over medium-low heat, stirring until the sugar and paste are fully dissolved. Do not boil.
  3. Froth the base: Pour the warm pistachio milk mixture into a milk frother or use an immersion blender until slightly foamy.
  4. Assemble the drink: Pour the cooled coffee into your serving glass. Add the warm pistachio milk mixture.
  5. Prepare the cold foam: In a separate chilled bowl, combine the heavy cream, powdered sugar, and pistachio extract. Whisk vigorously or use a handheld frother until soft peaks form.
  6. Top the latte: Gently spoon the cold foam over the top of the latte.
  7. Finish: Dust lightly with cocoa powder before serving immediately.
