Make this flavorful pineapple chicken stir-fry for a fast, satisfying weeknight dinner. You get sweet, sour, and savory notes in one simple skillet meal.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon ketchup
  • 1 teaspoon sesame oil
  • Pinch of red pepper flakes (optional)
  • Cooked jasmine rice, for serving

Instructions

  1. In a medium bowl, toss the chicken pieces with cornstarch until lightly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the bell peppers and onion to the same skillet. Stir-fry for 3 minutes until they start to soften.
  4. Add the garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the soy sauce, pineapple juice, rice vinegar, brown sugar, ketchup, sesame oil, and red pepper flakes (if using). This makes the best pineapple chicken sauce.
  6. Return the cooked chicken to the skillet. Add the pineapple chunks.
  7. Pour the sauce mixture over the chicken and vegetables. Bring the mixture to a simmer, stirring constantly until the sauce thickens slightly, about 1 to 2 minutes.
  8. Remove from heat immediately. Serve your tropical chicken skillet meal hot over cooked jasmine rice.

Notes

  • For the best texture, do not overcook the bell peppers; you want them slightly crisp.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
