4 medium parathas (store-bought or homemade)
1 lb ground beef (80/20 recommended)
4 slices cheese (Cheddar or Monterey Jack)
1 tablespoon neutral oil
Salt and black pepper to taste
For the Masala Fries:
2 large Russet potatoes, cut into fries
1 quart vegetable oil for frying
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon cayenne pepper
1 teaspoon salt
For Assembly:
1/2 cup plain yogurt or mayonnaise
2 tablespoons chopped cilantro
1 small red onion, thinly sliced
Instructions
Prepare the potatoes: Soak the cut fries in cold water for 30 minutes, then dry them completely with paper towels.
Heat the vegetable oil in a deep pot or fryer to 325°F (160°C). Fry the potatoes in batches until they are cooked through but not browned (about 5-7 minutes). Remove and drain on paper towels.
Increase the oil temperature to 375°F (190°C). Fry the potatoes a second time until golden brown and crisp (about 2-3 minutes). Drain well.
Make the masala seasoning: In a small bowl, mix the turmeric, cumin, coriander, cayenne pepper, and salt. Toss the hot fries immediately with the seasoning mixture until evenly coated. Keep warm.
Prepare the burgers: Divide the ground beef into 4 equal portions. Gently form them into loose balls; do not overwork the meat.
Heat the neutral oil in a large skillet or griddle over medium-high heat. Place the beef balls on the hot surface. Immediately press each ball down firmly with a sturdy spatula to create a thin smash burger. Season the tops with salt and pepper.
Cook for 2 minutes, then scrape under the patty to release it from the pan. Flip the patties. Place a slice of cheese on each patty and cook for 1 more minute until the cheese melts.
Prepare the parathas: Heat a dry skillet or griddle over medium heat. Cook each paratha for 1-2 minutes per side until they are hot, slightly puffed, and lightly browned. Brush lightly with butter if desired for extra flavor.
Assemble the Paratha Burger: Spread a thin layer of yogurt or mayonnaise on the inside of two parathas. Top one paratha with a cheesy smash patty, a few slices of red onion, and a sprinkle of cilantro. Place the second paratha on top to complete the burger.
Serve the Paratha Burger immediately alongside the hot Masala Fries.
Notes
For the best smash burger texture, use a very hot surface and press firmly only once when the meat first hits the pan.
If you prefer a spicier kick, add a pinch of chaat masala to the fries seasoning.
You can use store-bought ghee instead of butter when warming the parathas for an authentic flavor.
