Make this juicy smash burger tucked into a flaky, buttery South Indian paratha flatbread. This recipe offers a taste of the future of flavor in a simple, satisfying meal.

  • 4 medium parathas (store-bought or homemade)
  • 1 lb ground beef (80/20 recommended)
  • 4 slices cheese (Cheddar or Monterey Jack)
  • 1 tablespoon neutral oil
  • Salt and black pepper to taste
  • For the Masala Fries:
  • 2 large Russet potatoes, cut into fries
  • 1 quart vegetable oil for frying
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • For Assembly:
  • 1/2 cup plain yogurt or mayonnaise
  • 2 tablespoons chopped cilantro
  • 1 small red onion, thinly sliced

Instructions

  1. Prepare the potatoes: Soak the cut fries in cold water for 30 minutes, then dry them completely with paper towels.
  2. Heat the vegetable oil in a deep pot or fryer to 325°F (160°C). Fry the potatoes in batches until they are cooked through but not browned (about 5-7 minutes). Remove and drain on paper towels.
  3. Increase the oil temperature to 375°F (190°C). Fry the potatoes a second time until golden brown and crisp (about 2-3 minutes). Drain well.
  4. Make the masala seasoning: In a small bowl, mix the turmeric, cumin, coriander, cayenne pepper, and salt. Toss the hot fries immediately with the seasoning mixture until evenly coated. Keep warm.
  5. Prepare the burgers: Divide the ground beef into 4 equal portions. Gently form them into loose balls; do not overwork the meat.
  6. Heat the neutral oil in a large skillet or griddle over medium-high heat. Place the beef balls on the hot surface. Immediately press each ball down firmly with a sturdy spatula to create a thin smash burger. Season the tops with salt and pepper.
  7. Cook for 2 minutes, then scrape under the patty to release it from the pan. Flip the patties. Place a slice of cheese on each patty and cook for 1 more minute until the cheese melts.
  8. Prepare the parathas: Heat a dry skillet or griddle over medium heat. Cook each paratha for 1-2 minutes per side until they are hot, slightly puffed, and lightly browned. Brush lightly with butter if desired for extra flavor.
  9. Assemble the Paratha Burger: Spread a thin layer of yogurt or mayonnaise on the inside of two parathas. Top one paratha with a cheesy smash patty, a few slices of red onion, and a sprinkle of cilantro. Place the second paratha on top to complete the burger.
  10. Serve the Paratha Burger immediately alongside the hot Masala Fries.

Notes

  • For the best smash burger texture, use a very hot surface and press firmly only once when the meat first hits the pan.
  • If you prefer a spicier kick, add a pinch of chaat masala to the fries seasoning.
  • You can use store-bought ghee instead of butter when warming the parathas for an authentic flavor.
