  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium head of green cabbage, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Prepare the glaze: In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sriracha, if using. Set aside.
  2. Heat the olive oil and sesame oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the hot pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  4. Add the minced garlic and grated ginger to the same pan. Cook for 30 seconds until fragrant.
  5. Add the sliced cabbage to the pan. Stir fry for 5-7 minutes until the cabbage begins to soften but still has some crunch. This keeps the volume high.
  6. Return the cooked chicken to the pan with the cabbage.
  7. Pour the prepared soy glaze mixture over the chicken and cabbage. Stir to coat everything evenly.
  8. Pour the cornstarch slurry into the pan while stirring constantly. Cook for 1 minute until the sauce thickens slightly and coats the ingredients.
  9. Remove the pan from the heat. Garnish with sliced green onions and sesame seeds before serving immediately.

Notes

  • For extra flavor, you can marinate the chicken pieces in 1 tablespoon of the soy sauce mixture for 15 minutes before cooking.
  • This low carb stir fry works well with broccoli florets added along with the cabbage for more vegetable variety.
  • If you prefer a sweeter glaze, increase the honey by 1 teaspoon.
