  • 6 cups low sodium chicken broth
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup orzo pasta
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the chicken pieces to the pot. Cook until the chicken is lightly browned on the outside, about 3 minutes.
  3. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Stir in the orzo pasta, oregano, and thyme. Cook according to the orzo package directions, usually about 8 to 10 minutes, until the pasta is tender.
  5. Remove the pot from the heat. Stir in the fresh lemon juice, parsley, and dill.
  6. Season the soup with salt and pepper to your taste. Serve immediately for a truly healthy soup recipe experience.

Notes

  • For an extra layer of flavor, use homemade chicken stock if you have it.
  • If you prefer shredded chicken, cook the chicken breasts whole in the broth until done, then shred them before adding the orzo back in.
