Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the shortbread crust: In a medium bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake the crust for 15 minutes until lightly golden.
  4. While the crust bakes, prepare the cream cheese layer: In a separate bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth. Beat in 1 egg, vanilla extract, lemon juice, and lemon zest until just combined. Do not overmix.
