Budget-Friendly Slow Cooker Korean Beef Bowls

Make tender, flavorful Korean BBQ beef in your slow cooker using an inexpensive cut of beef for an easy, budget-friendly weeknight dinner that tastes like takeout.

Ingredients

  • 3 lb beef chuck roast, trimmed and cut into 2-inch chunks
  • 1 cup low-sodium soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 3 tablespoons sesame oil
  • 2 tablespoons minced fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 cup beef broth
  • Cooked white or brown rice, for serving
  • Garnish: Sesame seeds, sliced green onions

Instructions

  1. Place the beef chunks into the basin of your slow cooker.
  2. In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, water, sesame oil, ginger, garlic, red pepper flakes (if using), and beef broth until the sugar dissolves.
  3. Pour the sauce mixture over the beef in the slow cooker.
  4. Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the beef is fork-tender.
  5. Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the sauce. Stir to coat completely.
  6. Serve the shredded Korean beef over cooked rice. Garnish with sesame seeds and sliced green onions before serving your healthy rice bowls.

Notes

  • For thicker sauce, remove the beef and set aside. Skim any excess fat from the liquid. Bring the liquid to a simmer on the stovetop and cook until it reduces by about one-third, then return the beef to coat.
  • This recipe makes excellent meal prep beef; store leftovers in airtight containers in the refrigerator for up to 4 days.
