4 bone-in or boneless pork chops (about 1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 teaspoon Worcestershire sauce
1 clove garlic, minced
Instructions
Pat the pork chops dry with paper towels. Season both sides evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Place the pork chops in the hot skillet. Sear for 4 to 5 minutes per side until golden brown.
While the pork chops sear, whisk together the Dijon mustard, honey, apple cider vinegar, Worcestershire sauce, and minced garlic in a small bowl to create the homemade honey mustard sauce.
Reduce the heat to medium-low. Pour half of the honey mustard sauce over the pork chops in the skillet. Let it simmer for 1 minute, turning the chops to coat them in the glaze.
Continue cooking until the internal temperature of the pork chops reaches 145 degrees Fahrenheit, about 3 to 5 more minutes depending on thickness.
Remove the pork chops from the skillet and let them rest on a cutting board for 5 minutes.
Warm the remaining half of the honey mustard sauce slightly if needed, and drizzle it over the rested pork chops before serving.
Notes
For thick-cut pork chops (over 1.5 inches), you may need to finish them in a 375 degree Fahrenheit oven after searing to reach the correct internal temperature without burning the glaze.
If you prefer baked pork chops, mix the glaze ingredients, coat the chops, and bake at 400 degrees Fahrenheit for 20 to 25 minutes.
