Make these simple, no-cook turkey and spinach pinwheels. They are excellent healthy wraps for work and perfect meal prep snacks that hold up well without getting soggy.

  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup finely chopped fresh parsley
  • 4 large (10-inch) flour tortillas
  • 8 ounces thinly sliced deli turkey breast
  • 4 cups fresh spinach leaves

Instructions

  1. In a medium bowl, combine the softened cream cheese, ranch seasoning mix, garlic powder, and onion powder. Mix until smooth.
  2. Stir in the chopped fresh parsley.
  3. Lay one flour tortilla flat on a clean surface. Spread about one-quarter of the cream cheese mixture evenly over the entire surface of the tortilla, leaving a small border.
  4. Layer half of the sliced turkey breast over the cream cheese mixture.
  5. Place a layer of spinach leaves over the turkey, covering the surface.
  6. Tightly roll the tortilla from one edge to the opposite edge, creating a compact log.
  7. Wrap the rolled tortilla tightly in plastic wrap and refrigerate for at least 1 hour to firm up. This step is key for clean slicing.
  8. Repeat the process with the remaining tortillas, turkey, and spinach.
  9. When ready to serve, unwrap the chilled logs and slice each into 6 equal pinwheels using a sharp knife.

Notes

  • For best results and to prevent sogginess, prepare these wraps the day before serving and keep them refrigerated until you are ready to pack your lunch.
  • If you want extra flavor, add a thin layer of Dijon mustard over the cream cheese before adding the turkey.
