  • 4 (6 ounce) salmon fillets, skin on or off
  • 1/2 cup guava jelly or preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/4 cup finely diced red onion
  • 1 tablespoon chopped fresh cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the guava jelly, soy sauce, lime juice, and ginger to make the glaze.
  3. Pat the salmon fillets dry and season lightly with salt and pepper. Place them on the prepared baking sheet.
  4. Brush half of the guava glaze evenly over the tops of the salmon fillets.
  5. Bake for 10 minutes.
  6. While the salmon bakes, prepare the salsa. In a separate bowl, gently combine the diced mango, red onion, cilantro, and minced jalapeño, if using. Drizzle with olive oil and toss lightly.
  7. Remove the salmon from the oven. Brush the remaining glaze over the fillets.
  8. Return the salmon to the oven and bake for another 4 to 6 minutes, or until the salmon flakes easily with a fork and the glaze is slightly caramelized.
  9. Serve the guava glazed salmon immediately topped with a spoonful of the fresh mango salsa.

Notes

  • For extra flavor, you can broil the salmon for the last minute of cooking, watching carefully to prevent burning the glaze.
  • This fruit glazed fish pairs well with simple sides like steamed asparagus or coconut rice.
  • If you do not have guava jelly, you can substitute with apricot preserves mixed with a dash of hot sauce for a similar sweet heat.
