Make this flavorful honey chipotle salmon and vegetables on the grill with zero cleanup using foil packets. This is a light and easy BBQ meal.

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 2 tablespoons adobo sauce from canned chipotle peppers
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed vegetables (e.g., sliced zucchini, bell peppers, red onion)
  • Aluminum foil sheets (heavy duty)

Instructions

  1. Preheat your grill to medium heat (about 375°F).
  2. Tear off four large sheets of heavy-duty aluminum foil.
  3. In a small bowl, whisk together the honey, adobo sauce, lime juice, smoked paprika, salt, and pepper to create the honey chipotle glaze.
  4. Lightly brush the salmon fillets with olive oil.
  5. Place one salmon fillet in the center of each foil sheet.
  6. Arrange the mixed vegetables around the salmon on each foil sheet.
  7. Spoon the honey chipotle glaze evenly over the top of each salmon fillet.
  8. Fold the long edges of the foil together over the salmon, then tightly crimp the ends to seal the packet, leaving a little room inside for steam.
  9. Place the foil packets directly on the grill grates.
  10. Grill for 12 to 15 minutes, depending on the thickness of the salmon, until the fish flakes easily with a fork.
  11. Carefully remove the packets from the grill and let them rest for 2 minutes before opening and serving directly from the foil.

Notes

  • For easy cleanup, use heavy-duty foil or double-layer regular foil.
  • If you prefer less heat, reduce the amount of chipotle adobo sauce.
  • You can substitute asparagus or corn on the cob pieces for the mixed vegetables.
