  • 24 small corn tortillas

Instructions

  1. In a medium bowl, whisk together the lime juice, olive oil, minced garlic, cumin, chili powder, oregano, salt, and pepper to create the grilled chicken marinade.
  2. Add the cut chicken pieces to the marinade, toss to coat completely, cover, and refrigerate for at least 30 minutes or up to 4 hours for best flavor.
  3. Preheat your grill to medium-high heat (about 400 degrees F). Lightly oil the grates.
  4. Remove the chicken from the marinade, shaking off excess liquid. Place the chicken on the hot grill.
  5. Grill for 4 to 6 minutes per side, until the chicken is cooked through and has nice char marks. Remove from the grill and let rest for 5 minutes before roughly chopping or shredding.
  6. Warm the corn tortillas: Place them directly on the grill grates for 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds until pliable. Double up two tortillas for each taco base.
  7. Assemble your street tacos: Fill each doubled tortilla with the chopped grilled chicken.
  8. Top immediately with fresh cilantro, diced onion, pico de gallo, and a drizzle of cilantro lime crema. Serve with lime wedges.
