Create a fun, customizable, and colorful dessert station with these fruit pizza cookies and cream cheese frosting, perfect for your next celebration.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Assorted fresh fruit for topping (strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the 1 cup softened butter and 1 cup granulated sugar until light and fluffy.
  3. Beat in the egg and 1 teaspoon vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies. Gently flatten each mound slightly with the bottom of a glass.
  6. Bake for 8 to 10 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. To make the cream cheese frosting, beat the 8 ounces of softened cream cheese, 1/2 cup powdered sugar, 1/4 cup softened butter, lemon zest, and 1/2 teaspoon vanilla extract until smooth and creamy.
  8. Once the cookies are completely cool, spread a layer of cream cheese frosting on top of each cookie.
  9. Set up a station where guests can top their frosted cookies with their choice of fresh fruit for a truly customizable treat.
