Make this simple, one-pot shakshuka recipe for a savory brunch idea. You poach eggs directly in a rich, spicy tomato sauce, topping it with feta and fresh herbs for a dish perfect for sharing.

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 large eggs
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh cilantro or parsley

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 to 7 minutes.
  2. Add the garlic, cumin, smoked paprika, and chili powder. Cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes and diced tomatoes. Stir to combine. Season with salt and pepper. Bring the sauce to a simmer.
  4. Use a spoon to create six small wells in the tomato sauce. Carefully crack one egg into each well.
  5. Cover the skillet and cook on low heat for 8 to 10 minutes, or until the egg whites are set but the yolks are still runny. Alternatively, you can transfer the skillet to a preheated 375°F oven for 5 to 7 minutes to set the eggs.
  6. Remove from heat. Sprinkle the top evenly with crumbled feta cheese and fresh cilantro or parsley.
  7. Serve immediately with crusty bread for dipping.

Notes

  • You can prepare the tomato sauce base up to one day ahead. Store it covered in the refrigerator and gently reheat it on the stovetop before cracking in the eggs.
  • For a spicier dish, add 1/4 teaspoon of red pepper flakes with the other spices.
  • This recipe is great for a crowd; simply use a larger skillet or two skillets to cook more servings at once.
