2 large naan breads or pre-made flatbreads
1 cup cooked, shredded chicken (rotisserie works well)
1 tablespoon olive oil
1 cup cherry tomatoes, halved
6 ounces fresh mozzarella cheese, sliced or torn
1/4 cup fresh basil leaves, roughly chopped
2 tablespoons balsamic glaze
Salt and black pepper to taste
Instructions
Preheat your oven to 400 degrees Fahrenheit. Place the naan breads on a baking sheet.
Brush the surface of each flatbread lightly with olive oil.
Distribute the shredded chicken evenly over both flatbreads.
Arrange the halved cherry tomatoes and slices of fresh mozzarella over the chicken layer. Season lightly with salt and pepper.
Bake for 8 to 10 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are crisp.
Remove the flatbreads from the oven. Immediately top with the fresh basil leaves.
Drizzle the balsamic glaze over the top of each flatbread before slicing and serving.
Notes
For extra flavor, lightly brush the flatbreads with pesto before adding the chicken.
If you do not have balsamic glaze, you can reduce balsamic vinegar in a small saucepan until it thickens slightly.
This recipe is a great way to use leftover chicken breast.
