Make this unique and flavorful dill pickle bacon pasta salad. It combines tangy pickles, salty bacon, and a creamy ranch dressing for a satisfying cold side dish perfect for potlucks or summer gatherings.

  • 1 pound rotini or medium shell pasta
  • 8 slices bacon, cooked crisp and crumbled
  • 1 cup dill pickle relish (drained)
  • 1 cup chopped dill pickles
  • 1/2 cup finely chopped red onion
  • 1 cup frozen peas, thawed
  • 1 1/2 cups mayonnaise
  • 1/2 cup ranch dressing (bottled)
  • 2 tablespoons pickle juice (from the jar)
  • 1 tablespoon yellow mustard
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process. Set aside to cool completely.
  2. While the pasta cools, cook the bacon until crisp. Drain the bacon on paper towels and crumble it into small pieces.
  3. In a large bowl, prepare the dressing. Whisk together the mayonnaise, ranch dressing, pickle juice, yellow mustard, black pepper, and salt until smooth.
  4. Add the cooled pasta, crumbled bacon, dill pickle relish, chopped dill pickles, red onion, and thawed peas to the dressing mixture.
  5. Gently fold all ingredients together until the pasta and vegetables are evenly coated with the creamy dressing.
  6. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. This is a key step for the best flavor.
  7. Before serving, give the salad a final gentle stir. Serve cold as a savory cold pasta dish or easy picnic side.

Notes

  • For a sharper pickle flavor, substitute half of the relish with finely chopped fresh dill pickles.
  • If you want a deli style pasta salad texture, add 1/2 cup of shredded sharp cheddar cheese when mixing.
