Cowboy Butter Lemon Bowtie Chicken: Rich Garlic Butter Pasta

Make this Cowboy Butter Lemon Bowtie Chicken for a flavorful weeknight dinner. This recipe combines tender chicken, bright lemon, and a rich, herby cowboy butter sauce tossed with farfalle pasta.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound bowtie (farfalle) pasta
  • 4 tablespoons unsalted butter (for cooking chicken)
  • 1 cup prepared Cowboy Butter (see notes for quick version)
  • 1/2 cup reserved pasta water
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon salt, plus more for pasta water
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the bowtie pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta and set aside.
  2. Season the cut chicken pieces with salt and pepper.
  3. Melt 4 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  4. Reduce the heat to low. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let it burn.
  5. Add the prepared Cowboy Butter to the skillet. Stir until it melts completely into a sauce.
  6. Pour in the fresh lemon juice and stir well.
  7. Add the cooked chicken and the drained bowtie pasta to the skillet. Toss everything to coat in the sauce.
  8. Add the lemon zest and about 1/2 cup of the reserved pasta water. Stir continuously until the sauce thickens slightly and coats the pasta evenly. Add more pasta water, one tablespoon at a time, if the sauce seems too dry.
  9. Stir in the fresh parsley. Taste and adjust salt and pepper if needed.
  10. Serve immediately as a rich garlic butter chicken meal.

Notes

  • To make a quick Cowboy Butter if you do not have pre-made: Combine 1/2 cup softened butter with 1 tablespoon chopped chives, 1 teaspoon smoked paprika, 1/2 teaspoon cayenne pepper (optional for heat), 1 teaspoon dried oregano, 1 teaspoon garlic powder, and salt and pepper to taste.
  • For an even creamier sauce, you can add 1/4 cup heavy cream when you add the lemon juice.
  • This recipe works well as an easy bowtie pasta with chicken for a weeknight dinner.
