Ingredients

  • 1.5 lbs 80/20 ground chuck
  • 1 teaspoon kosher salt, plus more for seasoning
  • 0.5 teaspoon black pepper, freshly ground
  • 4 hamburger buns
  • 4 slices cheese (cheddar or American, optional)
  • Toppings: lettuce, tomato, onion, pickles

Instructions

  1. Gently form the ground chuck into four equal patties, about 3/4 inch thick. Do not overwork the meat; keep the mixture loose for juiciness.
  2. Create a slight indentation (dimple) in the center of each patty with your thumb. This prevents the burger from puffing up in the middle while cooking.
  3. Season the outside of the patties generously with salt and pepper just before placing them on the grill.
  4. Preheat your grill to medium-high heat (about 400°F). Clean and oil the grates well to prevent sticking.
  5. Place the patties on the hot grill. Cook for 3 to 4 minutes per side for medium doneness. Do not press down on the burgers with a spatula; this releases the juices.
  6. If using cheese, place a slice on each patty during the last minute of cooking and close the grill lid briefly to melt.
  7. Lightly toast the hamburger buns on the grill for about 30 seconds until golden brown.
  8. Assemble your burgers with your preferred toppings and serve immediately.

Notes

  • Using 80/20 ground chuck provides the necessary fat content for a moist burger.
  • For extra flavor, mix 1 teaspoon of Worcestershire sauce into the meat before forming patties, but mix very lightly.
  • Rest the cooked burgers on a plate for 2 minutes before serving to allow the juices to redistribute.
