Make these refreshing, low-carb cabbage taco wraps filled with quick-cooked shrimp and bright lime flavor. This is a healthy shrimp taco alternative perfect for summer meals.

  • 1 head green cabbage
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 avocado, sliced (optional topping)

Instructions

  1. Prepare the cabbage: Carefully remove 8 to 10 large, whole outer leaves from the cabbage head. If the center rib is thick, use a paring knife to carefully shave it down slightly so the leaf can fold easily.
  2. Season the shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper.
  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 to 3 minutes per side until pink and cooked through. Remove from heat.
  4. Make the lime dressing: In a small bowl, whisk together the fresh lime juice and lime zest.
  5. Assemble the wraps: Place the cooked shrimp into a bowl. Pour the lime dressing over the shrimp and toss gently to coat. Add the chopped cilantro and red onion, mixing well.
  6. Fill the wraps: Spoon the shrimp mixture evenly into the center of each cabbage leaf.
  7. Serve immediately. Top with sliced avocado if desired.

Notes

  • To soften the cabbage leaves for easier rolling, you can briefly dip them in boiling water for 15 seconds, then immediately place them in ice water. Pat dry before filling.
  • For extra crunch, add shredded carrots or thinly sliced radishes to the shrimp filling.
