  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh tarragon
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/4 cup water, or as needed
  • Salt and black pepper to taste

Instructions

  1. Place the shredded green and purple cabbage in a large bowl.
  2. In a food processor or blender, combine the parsley, chives, tarragon, Greek yogurt, mayonnaise, lemon juice, minced garlic, and Dijon mustard.
  3. Blend until smooth. Add water slowly until the dressing reaches your desired consistency.
  4. Season the green goddess dressing with salt and pepper.
  5. Pour the dressing over the cabbage mixture.
  6. Toss the salad gently until all the cabbage is evenly coated.
  7. Serve this healthy summer lunch immediately, or chill for 30 minutes to allow flavors to meld.
