Make these easy, cheesy, and spicy Buffalo Chicken Biscuit Bombs using refrigerated dough for a perfect, portable finger food for your next gathering.

  • 1 (16.3 ounce) can refrigerated flaky biscuit dough
  • 1 cup cooked, shredded chicken
  • 1/2 cup Buffalo wing sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons ranch dressing or blue cheese dressing
  • 1 tablespoon melted butter
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the shredded chicken, Buffalo wing sauce, softened cream cheese, Monterey Jack cheese, cheddar cheese, and ranch or blue cheese dressing. Mix until everything is well combined.
  3. Open the can of biscuit dough. Separate the biscuits. Gently flatten each biscuit piece slightly with your hand or a rolling pin.
  4. Place about 1 to 1.5 tablespoons of the chicken mixture into the center of each flattened biscuit.
  5. Carefully fold the edges of the biscuit up and over the filling, pinching the seams tightly to seal the filling inside. Roll gently into a ball shape.
  6. Place the sealed biscuit bombs seam-side down on the prepared baking sheet.
  7. In a small bowl, mix the melted butter and garlic powder. Brush the tops of the biscuit bombs with the butter mixture.
  8. Bake for 12 to 15 minutes, or until the biscuits are golden brown and cooked through.
  9. Remove from the oven and let cool slightly before serving.

Notes

  • For an extra cheesy center, add a small cube of mozzarella cheese inside with the chicken mixture before sealing.
  • Serve these hot with extra Buffalo sauce or ranch dressing for dipping.
  • This recipe works well as an easy graduation food item because it holds its shape well.
