  • 1 large head green cabbage, cut into 8 wedges
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
  2. Place the cabbage wedges cut-side down in the pot. Sear for 3 to 4 minutes until the edges are lightly browned.
  3. Add the minced garlic and grated ginger to the pot, stirring them around the cabbage for about 30 seconds until fragrant.
  4. Pour in the vegetable broth, soy sauce, and sugar. Season lightly with salt and pepper.
  5. Bring the liquid to a simmer. Cover the pot tightly, reduce the heat to low, and braise for 45 to 60 minutes, or until the cabbage is very tender and easily pierced with a fork.
  6. Remove the lid for the last 10 minutes of cooking if the liquid is too thin.
  7. Serve the cabbage wedges hot, spooning the pan liquid over the top.
