  • 1 cup boiling water
  • 2 tablespoons dried butterfly pea flowers
  • 1 cup fresh lemon juice
  • 1 cup simple syrup
  • 2 cups cold water
  • 1 cup blueberry puree
  • Ice cubes
  • Lemon slices and fresh blueberries for garnish

Instructions

  1. Steep the butterfly pea flowers in 1 cup of boiling water for 5 minutes to create a strong blue tea. Strain the flowers out and discard them. Let the blue tea cool completely.
  2. In a large pitcher, combine the cooled blue tea, lemon juice, simple syrup, and 2 cups of cold water. Stir well. This is your base lemonade.
  3. To serve, fill glasses with ice cubes. Pour the lemonade base into the glasses until they are about three-quarters full.
  4. Slowly pour the blueberry puree over the back of a spoon into each glass. The puree will sink initially.
  5. Serve immediately. As the guest stirs, the acid from the lemonade will react with the butterfly pea flower extract, causing the drink to change color from deep blue to purple or pink, achieving the glacier aesthetic.
  6. Garnish each glass with lemon slices and fresh blueberries for a maximalist presentation.

Notes

  • For a sweeter drink, increase the simple syrup slightly.
  • Use fresh lemon juice for the best flavor and color reaction.
  • If you do not have blueberry puree, you can use blueberry syrup, but reduce the amount of simple syrup used in the base.
