1.5 lbs ground beef (80/20 recommended)
1 tablespoon olive oil
3 large yellow onions, thinly sliced
1 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
12 slider buns
1/2 cup sharp white cheddar cheese, sliced or shredded
2 tablespoons butter, softened
Instructions
Prepare the caramelized onions: Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for 25 to 35 minutes until deep brown and sweet. Add 1/2 teaspoon of salt during the last 10 minutes of cooking. Set aside.
Form the beef patties: Gently mix the ground beef with Worcestershire sauce, smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Divide the mixture into 12 equal portions and form them into small patties, slightly wider than the slider buns.
Cook the sliders: Heat a large cast-iron skillet or griddle over medium-high heat. Cook the patties for 3 to 4 minutes per side for medium doneness. During the last minute of cooking, top each patty with a slice of cheddar cheese and cover the skillet briefly to melt.
Toast the buns: Spread the softened butter on the cut sides of the slider buns. Place them cut-side down on the griddle for 1 to 2 minutes until lightly golden brown.
Assemble the gourmet appetizer: Place a cheesy beef patty on the bottom half of each bun. Top the patty generously with the sweet and smoky caramelized onions. Place the top bun on.
