Ingredients
Scale
1 pint cherry or grape tomatoes
1 package (8 ounces) small fresh mozzarella balls (bocconcini), drained
1 package (6 ounces) sliced Genoa salami, folded
1 package (6 ounces) sliced pepperoni, folded
1 jar (6 ounces) marinated artichoke hearts, drained
1 jar (5 ounces) pitted Kalamata olives
1 jar (5 ounces) pitted green olives
1/4 cup balsamic glaze (store-bought or homemade)
8-inch wooden skewers
Instructions
Gather all your ingredients. You will assemble these handheld salads without heat.
Take one wooden skewer. Start by threading one cherry tomato onto the skewer.
Next, thread one folded piece of salami onto the skewer.
Add one mozzarella ball, followed by one folded piece of pepperoni.
Thread one marinated artichoke heart onto the skewer.
Alternate with the remaining olives, threading one Kalamata olive and one green olive onto the skewer.
Repeat the layering process until the skewer is full, aiming for a visually appealing mix of colors and textures.
Arrange the finished antipasto skewers on a serving platter.
Just before serving, drizzle the balsamic glaze evenly over all the skewers.
Notes
For best results, assemble the skewers no more than one hour before your graduation party to keep the ingredients fresh.
If you cannot find small mozzarella balls, you can cut larger fresh mozzarella into one-inch cubes.
You can substitute prosciutto for salami or add marinated mushrooms for extra flavor.
