15 Minute Lemony Broccolini Pasta

Make this quick summer dinner using just one pot and five ingredients for a fresh, flavorful meal when you need fast weeknight meals.

Ingredients

  • 12 oz spaghetti or linguine
  • 1 bunch broccolini, trimmed and halved
  • 1/4 cup olive oil
  • 2 lemons, juiced and zested
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package directions in salted water.
  2. During the last 3 minutes of cooking, add the broccolini to the boiling pasta water.
  3. Drain the pasta and broccolini, reserving about 1/2 cup of the cooking water.
  4. Return the pasta and broccolini to the pot.
  5. Add the olive oil, lemon juice, lemon zest, and Parmesan cheese. Toss everything together.
  6. Add reserved cooking water, one tablespoon at a time, until the sauce coats the pasta lightly.
  7. Serve immediately.

Notes

  • If you do not have Parmesan, nutritional yeast provides a good substitute for a dairy-free option.
  • For an extra layer of flavor, add a pinch of red pepper flakes with the lemon zest.
