A classic Southern-style baked squash casserole with a cheesy filling and buttery Ritz cracker topping. Perfect for family meals, potlucks, or holiday dinners.

Ingredients

  • 4 cups yellow squash, sliced
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 egg, beaten
  • 1/4 cup butter, melted
  • 1 sleeve Ritz crackers, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil squash and onion in salted water for 5 minutes. Drain well.
  3. Mix squash, onion, cheese, sour cream, egg, salt, and pepper in a bowl.
  4. Pour mixture into a greased casserole dish.
  5. Combine crushed Ritz crackers with melted butter and sprinkle over the top.
  6. Bake for 25-30 minutes until golden and bubbly.

Notes

  • Use fresh yellow squash for best results.
  • For extra crunch, add more Ritz crackers on top.
  • Can be made ahead and refrigerated before baking.
