4 cups yellow squash, sliced
1 small onion, chopped
1 cup shredded cheddar cheese
1/2 cup sour cream
1 egg, beaten
1/4 cup butter, melted
1 sleeve Ritz crackers, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 350°F (175°C).
Boil squash and onion in salted water for 5 minutes. Drain well.
Mix squash, onion, cheese, sour cream, egg, salt, and pepper in a bowl.
Pour mixture into a greased casserole dish.
Combine crushed Ritz crackers with melted butter and sprinkle over the top.
