A comforting slow cooker chicken pot pie with tender chicken, vegetables, and creamy sauce.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 refrigerated pie crust

Instructions

  1. Place chicken, carrots, potatoes, peas, and corn in the slow cooker.
  2. In a bowl, mix cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, and black pepper.
  3. Pour the mixture over the chicken and vegetables.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Unroll the pie crust and place it over the filling. Tuck the edges in.
  6. Cover and cook for another 30 minutes until the crust is golden.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add more broth if you prefer a thinner sauce.
  • Let it cool slightly before serving.
