Delicious rhubarb oat bars with a buttery oat crust and tangy rhubarb filling. Perfect for a sweet treat or dessert.

  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix rhubarb, granulated sugar, and lemon juice. Set aside.
  3. In another bowl, combine flour, oats, brown sugar, baking soda, and salt.
  4. Add melted butter to the dry ingredients and mix until crumbly.
  5. Press half of the oat mixture into the prepared pan.
  6. Spread the rhubarb mixture evenly over the crust.
  7. Sprinkle the remaining oat mixture on top.
  8. Bake for 35-40 minutes or until golden brown.
  9. Let cool before cutting into bars.

Notes

  • Store in an airtight container for up to 3 days.
  • For a sweeter filling, add more sugar to the rhubarb mixture.
  • Substitute frozen rhubarb if fresh is unavailable.
