- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 tbsp lemon juice
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix rhubarb, granulated sugar, and lemon juice. Set aside.
- In another bowl, combine flour, oats, brown sugar, baking soda, and salt.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press half of the oat mixture into the prepared pan.
- Spread the rhubarb mixture evenly over the crust.
- Sprinkle the remaining oat mixture on top.
- Bake for 35-40 minutes or until golden brown.
- Let cool before cutting into bars.
