  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 cups chopped rhubarb
  • 1/4 cup cornstarch
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in butter until the mixture resembles coarse crumbs.
  3. Press half the mixture into the bottom of the pan. Bake for 15 minutes.
  4. In another bowl, combine rhubarb, cornstarch, brown sugar, vanilla, and cinnamon. Spread over the baked crust.
  5. Sprinkle the remaining crumble mixture on top. Bake for 30-35 minutes until golden.
  6. Let cool before cutting into bars.

  • For extra flavor, add a pinch of nutmeg to the crumble.
