A moist and sweet quick bread loaded with fresh peaches, perfect for summer baking.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups diced fresh peaches

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat eggs, oil, milk, and vanilla.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Fold in diced peaches.
  6. Pour batter into prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use ripe peaches for best flavor.
  • Dust with powdered sugar or add a glaze if desired.
  • Store in an airtight container for up to 3 days.
