- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup fresh pineapple chunks
- In a bowl, mix pineapple juice, honey, soy sauce, olive oil, garlic powder, black and salt and salt.
- Place chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and grill for 6-7 minutes per side, or until internal temperature reaches 165°F.
- Add pineapple chunks to the grill during the last 2 minutes of cooking.
- Brush chicken with remaining marinade while grilling.
- Serve hot with grilled pineapple on top.
Notes
- For extra flavor, reserve some marinade before adding it to the chicken and use it as a glaze.
- If you don’t have fresh pineapple, canned pineapple chunks work too.
- Marinate chicken for up to 4 hours for deeper flavor.
