  • 1 ripe banana, mashed
  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional toppings: fresh fruit, maple syrup, nuts

 

Instructions

  1. In a bowl, mash the ripe banana.
  2. Add rolled oats, milk, egg, baking powder, cinnamon, and salt to the mashed banana. Mix well.
  3. Let the batter sit for 5-10 minutes to allow the oats to absorb the liquid.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve immediately with your favorite toppings.

 

Notes

  • For extra flavor, add a splash of vanilla extract to the batter.
  • Adjust the amount of milk to achieve your desired batter consistency.
