A refreshing cold pasta salad with Mediterranean flavors, perfect for cookouts or make-ahead meals.

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the pasta salad and toss gently to coat.
  5. Sprinkle with fresh parsley before serving.

Notes

  • This salad can be made ahead and stored in the refrigerator for up to 2 days.
  • For extra flavor, let it sit for 30 minutes before serving.
  • Add grilled chicken or shrimp for a protein boost.
