A delicious and moist rhubarb bread that’s perfect for breakfast or a snack. This recipe combines the tartness of rhubarb with a sweet, tender crumb.

  • 1 1/2 cups chopped rhubarb
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. In another bowl, whisk flour, baking soda, and salt.
  5. Alternately add flour mixture and buttermilk to the butter mixture, mixing just until combined.
  6. Fold in rhubarb and walnuts (if using).
  7. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use fresh rhubarb for best results.
  • If you don’t have buttermilk, mix 1/2 cup milk with 1/2 tbsp lemon juice and let sit for 5 minutes.
  • Store leftovers in an airtight container for up to 3 days.
